Water gas is a mixture of hydrogen and carbon monoxide. Because the main component of coal is carbon, carbon and water react at high temperature to form hydrogen and carbon monoxide, and the industry generally uses coal (sometimes coke, coke also comes from coal) and water to react with water to make this mixture, so it is called water gas.
In industry, the water gas method is used to make hydrogen, that is, carbon and water react at high temperature to form the reaction of carbon monoxide and hydrogen.
